Seriously Sweet Puff-Puff Pudding

I haven't seen that many recipes for Nigerian puddings so it raises my curiosity to find ways of using some existing and well known desserts or well known foods, to create a real pudding that can be served as such.

Inspired by the very popular British bread and butter pudding, I decided to use puff-puff to create a winning pudding recipe;... I believe that with today's recipe, I have achieved my aim....or have I?!! I want you to tell me once you try this out.

Ingredients: (This does not include quantity to enable you the freedom to adjust levels to suit your sweet tooth...)
  • You need some already prepared puff-puffs (check out my previous post on how to make them here
  • Condensed milk (optional)
  • Blackcurrant and maple syrup dip (check out the recipe here
  • Some of your favourite ice-cream You may want to add some chopped dried fruits (optional) 

What to do:
  1. Thinly and evenly slice the puff-puffs across their widths/diameters. Ensure that the slices are of even and require no further cutting into while being eaten. If cut evenly, this will also ensure proper layering when served. 
  2. Layer the puff-puff slices into small ramekins. Drizzle some condensed milk and blackcurrant dip over the sliced puff-puff and top with a scoop of your favourite ice-cream. 
  3. Best served when puff-puff is still hot/warm. The temperature contract between the warm puff-puff and ice cold ice-cream need to be experienced rather than be told.

If you are on a diet, look away now!, because this recipe creates a sensationally sweet tasting puff-puff, which you can enjoy as an occasional indulgence.
