Nigerians have been wrongly accused of not eating enough vegetables.... This of course is not the case. In fact we eat plenty of vegetables just that we always / usually cook them first.

Another fact is that Nigerian foods are considered heavy and high in carbohydrates, which if eaten as often as the typical Nigerian does, may lead to weight gain.

Eating salads can be a really good way to vary ones diet and can also be used to support weight loss if the right ingredients are used.

There are indeed a lot of local food ingredients that can be used to make great tasting and delicious salads....in my next couple of posts I will share some of my really simple and exciting salad recipes that can be served for lunch or dinner.
