Plantain Noodles Stir Fry

Plantain Noodles Stirfry
So I will demonstrate how to make a meal from your spiralized plantains.....(check out how to spiralize here)

What you need
  • Pre cooked plantain noodles. Steam or lightly fry the noodles before adding to your stir fry. Alternatively, uncooked freshly spiralized plantains can be used but care should be taken during the stirfrying process to avoid breaking them up or turning them into mush.
  • Onions. (chop finely)
  • Red & green peppers. (chop finely)
  • Ugu leaves young shoots to garnish (finely sliced)
  • Coconut oil
  • Pre cooked red pepper sauce
  • Some smoked fish chunks. Soak in some hot water to clean and soften. You can use steamed fish chunks or raw fish chunks or even chicken as substitute.
  • Salt and pepper to taste

Plantain Noodle Stirfry

What to do
  1. Heat some oil in a large wok or sauce pan. Then add the chopped onions and peppers. Add also a generous amount of the red pepper sauce. 
  2. Allow all to sizzle for a few minutes until the onions and peppers soften but not over cooked. Now add the fish. Stir in. 
  3. Then add the pre cooked plantain noodles and stir in. 
  4. Add also some sprinkling of water to avoid the sauce drying out or burning. 
  5. Stir all in and turn heat down. Allow the noodles to cook through for a couple more minutes. 
  6. Taste and adjust salt. Serve garnished with some ugu slices
  7. *Note: you can use freshly spiralized plantain but care must be taken to avoid overcooking them or turning them into a mush. Pre frying or pre steaming them is advised.
