In my view, sandwiches are the original fast food. They are so versatile, you can make them with almost any type of filling imaginable, they are quick to make and depending on the filling could be quite healthy and satisfying.
For most of us, sandwiches are the ultimate lunch time food, they are also handy as a light evening meal. As mentioned earlier, you can make sandwich fillings with anything imaginable....creating sweet, savoury, creamy, tangy, practically all sorts of tastes, flavours and textures.
Whatever the case, a good sarnie (as it's commonly referenced) requires a really moist filling which aids ingestion & enjoyment of the food. Also the taste & flavours of the fillings should complement the often bland taste of the bread used. I have seen and tasted quite a wide range of sandwiches and most of the ones I really love tend to have a spicy kick to them.

My recipe today is a slight twist on the well known shrimp sandwich. Its really quite simple and quick to make. If you want to explore a different taste in your sandwich, and if you love a bit of spice in your sandwich, you must try this recipe.
Ingredients:
- A (300g) pack of cooked shrimps
- 1 Spoonful of diced green peppers
- 1 Spoonful of finely diced red sweet peppers
- 1 Spoonful of finely chopped onion
- Some pre-prepared Nigerian style red spicy pepper sauce (see one of my previous posts)
- 4 slices of your preferred bread
- Virgin olive oil Some mayonnaise (for that added creaminess - optional)
- Some salt and freshly milled black pepper
What to do:
- In a saucepan, heat 1-2 tablespoons of olive oil and sauté the peppers and onions, add a pinch of salt and a pinch of black peppers. Allow to sizzle for just about a minute or two.
- Then add about 2 tablespoons (or more) of the spicy red pepper sauce, stir well.
- Remove the saucepan from heat and add the cooked shrimps. Mix the shrimps into the sauce and pepper sauté, check and adjust the salt level and also check the flavours especially flavours from the sauce used. You may wish to allow this mix to cool for about 5 minutes before adding some mayonnaise for an added moistness, creaminess and consistency.
- Mix all together and fill into your sandwich.
