Funke Koleosho's Booli with Peanut Butter

Booli is roasted plantain and this, according to popular saying in Nigeria, is the "common man's food! How true that is! The stuff is abundant and readily sold on major street corners around lunch time, catering to every day worker....served with roasted groundnuts.

Today's recipe is culled from my cooking App Cook!Nigeria and it features a variant of the popular street food/snack....booli and epa.

What you need
  • Just ripe firm plantain
  • Peanut butter
What to do
  1. Peel the plantain  and bake in an oven 180 degrees for about 20 minutes, checking regularly to avoid burning
  2. Serve with some peanut butter

    1. Yes, I left the oven ajar just to get some air flowing around the plantain....but I imagine that if you have a fan assisted oven, you may not need to do this...
