Fish is best enjoyed at its freshest state. From sea straight onto the cooking pan! Getting fresh fish is not always possible, because, believe me, most fish sold as fresh are actually a couple days old. Most have been caught and chilled over some days before they are sold. Any time I get the opportunity to buy fresh fish, I mean really fresh fish, I just want to make cook it minimally and dress it up with a really savoury sauce. This way, I think, you get the most of its tastes and flavours.

What you need
- Fresh sea bass (fresh tilapia or snapper can also be used)
- Handful of chopped locust beans
- Handful of chopped onions
- Handful of chopped mixed sweet peppers
- 1 finely chopped green birds eye chilli
- Coconut oil
- Salt
- Black pepper

What to do
- Gut and clean the fish, rinsing several times in fresh clean water. (You can ask the fish monger to gut and scale the fish for you).
- Allow the fish to drain of water then rub some salt all over the fish, in particular the gut/cavity. Allow to stand for about 5 minutes.
- Then seam by placing onto some foil paper, making a pouch.
- Steam for about 10 minutes depending on the size of the fish.
- Simultaneously heat some oil in a sauce pan and add the chopped peppers, onions and chopped chilli.
- Allow to sizzle for a minute or two, then add the chopped locust beans. Stir and season with some salt and black pepper. As an option you can use your favourite seasoning cube.
- Remove the fish from the pouch and place on a plate and pour the sauté over it.....
- Serve hot with some boiled plantain. Really delightful...
