Steamed Garden Eggs with Yam Thins & Smoked Salmon


You can make a really quick meal from steamed garden eggs, some smoked salmon and yam. Serve as breakfast light lunch or dinner. Here is how:

What you need
  • Garden eggs
  • Fresh puna or abuja yam.
  • Smoked salmon
  • Pre-made red pepper sauce
  • Onion, finely chopped
  • Coconut oil
  • Salt to taste
  • Suya spice (optional)
  • Parsley for garnish

What to do

To steam the garden eggs: wash the garden eggs then from the stalk end, slice them carefully into quarters ensuring you do not cut them through, such that they are still attached on the other side. Then with the attached side placed upside in the steamer, steam for about 5 minutes depending on their size, making sure the garden eggs do not overcook. You can also carry this process out in a microwave oven.

To make the sauce: heat some oil in sauce pan and add the chopped onions, allow to soften then add some pre-made red pepper sauce, recipe here. Stir all ingredients together. Taste for salt.

To make the yam thins: peel yam and wash thoroughly to remove traces of soil. then using a mandolin slicer, thinly slice strips of yam. Cook briskly in hot oil. These will cook really quickly because they are so thinly sliced. Place cooked thins on some kitchen towel to remove excess oil.
Sprinkle some suya spice on to add tastes. This is however optional

To serve, place the steamed garden eggs, making the attached side the base, looking like an opening flower petal, as shown in the picture. Scoop a generous amount of the sauce and some sliced smoked salmon into the garden egg "petals". Also serve with the yam thins and slices of smoked salmon.
