Little bits here and there, and a bit of creativity is all you need to wow your guests, and give them a really memorable dining experience.
When ever we have guests, I do enjoy staying with the crew, chatting and laughing and having a good time,... not remain in the kitchen slaving away..
For this dish, all you need is a really good drink to pair with it, and perhaps a few other simple, easy to make, and quick canapes...
What you need
- Fresh eggs, as many as you want, usually 1-2 eggs per guest
- Plantains
- Pre-made ata din din (get recipe here)
- Salt and pepper to taste
- Some mayonnaise (to prevent the yolk from drying out)
- Some boiled ripe plantains. Remove the black seeds and make into a puree
What to do
- Boil the eggs (hard boiled) and carefully remove the shell. Then slice across the side and remove the yolk.
- Place all the yolk in a bowl. Also add some pureed plantain. With a fork, break the yolks and mix together with the boiled pureed plantain.
- Then add a generous amount of ata din din. (You may add some mayonnaise to keep the mixture moist and prevent from drying out.)
- Mix all together until well combined. Finally, scoop portions of the yolk back into the boiled egg whites.
- Garnish by sticking small pieces of fried plantain into the eggs.
- Place in the fridge until needed.
